The Chef, of Thai origin, plays with mixed herbs and spices and creates exotic flavoursome dishes: spiced bass tartar, spicy chicken with citronella and sticky rice, steamed bass in its spiced broth and the famous Crying Tiger (Tigre qui pleure – slices of black angus beef), an iconic dish!
